Mr. Grumble's Healthy and Delish Red Fish Dish

When Mr. Grumble and I decided to start eating healthy, we made the choice that seafood was going to be on our meal plan. We eat a lot of fish and this dish I share with you is one of our favorites. From his recipes and in his words is a dinner of champions. I hope you enjoy it as much as we do.



Ingredients:


Two filets of redfish, rinsed and patted dry

One lemon, halved

Fresh ground pepper

Sea salt

Blackened seasoning for fish (any brand, or make your own, its basically just sea salt and paprika)

Olive oil

 

Cooking Instructions:


First, relax. This is not a blackened fish. Blackened fish makes for tasty supper, but it can destroy the odor in your home and doom you to hard cleaning duty. Don’t be afraid of the blackened seasoning in the recipe. That is not the vibe we are wanting with this because this is simple, easy, and low effort.

 

I use an electric skillet at 350° when I want the fish to be firm. It is tastier if I use my cast iron skillet, but the fish tends to fall apart.



While the skillet heats, season one side of the fish with a light dribble of olive oil and also pour some into the skillet. Season the fish with pepper, sea salt, and just a light touch of the blackening seasoning. Then squeeze half a lemon over the fish.





Now your skillet is hot, put the fish seasoned side down, and repeat the exact same process for the naked side up.

 

Cover the skillet and let it cook for approximately five to six minutes. Flip the fish, and cook for four to five minutes or until thoroughly cooked. Serve immediately.  

I like to serve this with a nice green salad. It should be made before. Maybe add a baked potato, but we often skip the potato. Enjoy.
